Banana Cake

  • teaspoons  vanilla extract
  • teaspoons  baking soda
  • cooking spray
  • 2 ½  cups  all-purpose flour
  • teaspoon  table salt
  • cups  granulated sugar
  • cups  mashed banana
  • 1 cup  canola oil
  • ¾  cup  plain whole Greek yogurt
  • ¼  cup  whole buttermilk
  • large  eggs

Banana Caramel Sauce

  • ⅓  cup unsalted butter
  • ¼ teaspoon  sea salt
  • cup  dark brown sugar
  • ¾ teaspoon  ground cinnamon
  • ½ cup heavy cream
  • 1 ½ very ripe bananas, mashed
  • ¾  teaspoon  vanilla bean paste
  • tablespoons  dark rum, divided
  • ripe bananas, sliced

Caramel Frosting

  • cups  powdered sugar
  • cup  salted banana caramel sauce
  • 2 cups of unsalted butter, softened


  • Preheat the oven to 350 degrees . Spray round cake pans with cooking spray, and put parchment at the bottom.
  • Whisk together flour, baking soda, and salt in a bowl. Whisk together sugar, mashed banana, oil, yogurt, buttermilk, vanilla, and eggs in another bowl; add to flour mixture and stir just until mixed. Put batter evenly in prepared pans.
  • Bake in preheated and then insert a toothpick and if it comes out clean. Cool  pans on a wire rack for 8 mins. Put the cakes from pans to a wire rack to cool completely, about 1 hour.
  • For caramel sauce,put sugar, cream, butter, cinnamon and salt in a saucepan. Cook it and whisk it constantly, until all butter is melted and sugar is dissolved.Whisk in mashed banana, vanilla bean paste, and 3 tablespoons of the rum and take it off from heat.
  • Put sliced bananas in a bowl and put on with 4 tablespoons of the caramel sauce and remaining 1 tablespoon rum. Cool remaining caramel sauce.
  • For the caramel frosting, beat butter in the bowl until light in color. Slowly add powdered sugar, and beat on medium flame until it's light and fluffy. Add a cup of the salted banana caramel sauce, and beat until combined. Transfer a cup of caramel frosting to a piping bag.
  • For cake ,place a cake layer on a serving plate. Using the piping bag to pipe the Caramel Frosting around the outer edge of the cake layer on top of frosting. Put  sliced banana mixture inside the frosting ring and spread it thoroughly.Put  second cake layer. Spread 2/3 cup caramel frosting over the second layer. Repeat the process of piping at edges.
  • Put remaining sliced banana mixture inside frosting ring and spread.Top with the last cake layer. Spread all the remaining frosting on top and sides of the cake and smooth it. Use a piping bag for decoration.Cut and serve with remaining caramel sauce and slices of bananas.
