Ingredients
  

  • ½ cup unsweetened cocoa powder
  • cup  white sugar
  • 2 cups all-purpose flour
  • 2 teaspoons  vanilla extract
  • 1 cup   butter, softened

Instructions
 

  • Mix together 2 cups plus 1 tablespoon flour, cocoa powder, espresso powder, and salt.
  • Beat sugar and butter with an electric beater in a bowl until it gets fluffy; beat in vanilla. Moreover, add dry ingredients in 3 separate additions, mixing until completely combined after each addition, until a thick dough forms. Flatten the dough in a large disc and wrap it. Refrigerate the dough for 30 minutes.
  •  Line cookie sheets with parchment paper.
  • Remove dough from the fridge and roll out on a floured surface. Cut out shapes using cookie cutters. Knead any dough scraps back together and refrigerate for about 20 minutes.
  • Preheat oven 320F (160C).
  • Bake cookies in the preheated oven for 10 minutes, use 1 baking sheet at a time, Allow cookies to cool.
