Ingredients
  

  • 1 teaspoon ground cinnamon
  • 5 whole cloves
  • 4 cups milk
  • 2 ½ teaspoons vanilla extract, divided
  • 12 large egg yolks
  • 1 ½ cups white sugar
  • ½ teaspoon ground nutmeg
  • 4 cups light cream
  • 2 ½ cups light rum (Optional)

Instructions
 

  • Combine milk, cinnamon, 1/2 teaspoon vanilla, and cloves in a pan over the low heat, stir and heat for 5 minutes. Increase heat to medium speed, slowly bring to a boil. Remove from the heat.
  • Whisk egg yolks in a bowl until yellow in color. Add sugar and whisk until it gets fluffy.
  • Pour some of the hot milk mixture into the egg yolk mixture, whisk quickly to avoid scramble the eggs. Whisking to combine all milk properly.
  • Pour the mixture back into the pan. Cook over medium heat, stir constantly, until it gets thick, for 3 minutes. Let it cool.
  • Stir cream, rum, vanilla and nutmeg. Refrigerate before serving.
