To sweeten the truffles sugar is added. Also, white chocolate or dark chocolate is required.

How To Make Pumpkin Balls

Firstly, make the filling by combining together cream cheese, sugar, and pumpkin, beat until it is smooth. Then, stir in finely crushed graham cracker crumbs and pumpkin pie spice.  Chill the filling for at least one hour. After the filling is chilled, roll them into balls. Chill these truffle balls for 30 minutes. Dip these chilled truffle balls into the white chocolate. Lastly, sprinkle with graham cracker crumbs for garnish and store in the refrigerator.

  • ½ teaspoon pumpkin spice
  • ½  package vanilla sandwich cookies
  • 4 packages cream cheese, softened
  • 2 tablespoons  pumpkin puree
  • ⅛  teaspoon  salt
  • 1 package white chocolate chips
  • melted dark chocolate, melted caramel, pumpkin pie spice, candy eyes(They are optional)


  • Put sandwich cookies in a food processor until sand-like consistency. Add in cream cheese, pumpkin puree, pumpkin pie spice, and salt. Continue crushing,until a loose dough is formed.
  • Using cookie scoop, take out 18 even portions of the dough onto a parchment which is lined in a baking sheet. Move to the freezer until the dough is firm enough then roll each portion into a ball shape. Move back to the freezer to make it hard for about 10 to 12 minutes.
  • Melt white chocolate chips in the microwave ,stirring in between, until the chocolate is fully melted. Dip each pumpkin spice ball into the chocolate. Fully coat the dough in chocolate, then drain it , then place it back on the parchment which is lined with the baking sheet.
  • cool the truffles to room temperature then top it with melted chocolate, caramel, or more pumpkin pie spice. Keep in the refrigerator just before serving it.
  • You can coat it according to your taste in dark chocolate or white chocolate.
