  • 3 large egg yolks
  • 1 1/2 cups heavy whipping cream
  • 1/2 cup sugar
  • 2 cups raspberries
  • 2 tablespoons sugar
  • 2 drops vanilla extract
  • 1 pinch salt


  • Firstly, in a small bowl whisk egg yolk. On medium flame heat cream and sugar in a pot. Then, whisk hot cream in the egg yolk and then whisk warm yolk mixture into the hot cream and stir constantly so that mixture gets thickened. Remove it from the heat and strain it quickly.
  • After that, whisk in remaining cream; cover and chill it in the refrigerator.
  • Moreover, puree raspberries in a food processor and sieve to remove the seeds. Stir in sugar until it is dissolved. Then, add raspberry puree to the cold cream mixture. After that stir in vanilla extract and salt. Let it chill for 30 minutes in the refrigerator.
  • Lastly, pour the mixture into the ice cream maker and freeze for 20 minutes. Then transfer it to an airtight container and freeze for 4 hours so that the ice cream is firm.
