How to make Vanilla Bean Ice Cream

First, whisk egg yolks and sugar in a bowl until smooth. After that, split the vanilla bean and scrape the seeds from the vanilla bean. Next, in a saucepan add milk, salt, vanilla bean seeds, and vanilla bean pods. Remove it from heat after the milk is simmered. Add the hot milk to the egg and sugar mixture; whisk constantly. Then, add the egg mixture to the saucepan with remaining hot milk, stir constantly. After that, add vanilla extract and heavy cream. Cover it with plastic wrap and refrigerate for 3 hours. Churn the ice cream mixture until it is thickened. Freeze for four hours.

Ingredients
  

  • 4 large egg yolks
  • ¾ cup granulated sugar
  • 1 vanilla bean
  • 1 ½ cups whole milk
  • ½ tsp salt
  • 1 ½ cups heavy cream
  • ½ tsp vanilla extract

Instructions
 

  • Firstly, in a medium bowl whisk egg yolks and granulated sugar until it is smooth.
  • Then, split the vanilla beans in half and scrape the seeds from the vanilla beans.
  • After that, in a saucepan add milk, salt, vanilla bean seeds, and vanilla bean pods. Let the milk simmer and then remove it from heat. Add the hot milk in egg and sugar mixture and whisk constantly.
  • Next, add the egg mixture back to the saucepan with remaining hot milk; stir constantly until the base has thickened enough.
  • Moreover, strain the mixture into a bowl to remove any pieces of egg. Add vanilla bean pod to the mixture. Also, add vanilla extract and heavy cream. Cover the bowl with plastic wrap and refrigerate for 3 hours.
  • Then, remove the vanilla bean pods and then churn the ice mixture in the bowl of your ice cream maker, until it reaches consistency.
  • Pour the ice cream in an airtight container. Cover it with a plastic wrap. Freeze it for 4 hours
  • Lastly, sit at room temperature for 5 minutes before serving.
