  • 4 Cornish game hens
  • salt and pepper to taste
  • 3 tablespoons olive oil, divided
  • 1 lemon, quartered
  • 8 sprigs fresh rosemary, divided
  • 24 cloves garlic
  • cup white wine
  • cup low-sodium chicken broth


  • Firstly, preheat the oven to 450-degree F. Meanwhile, rub hens with olive oil; lightly season Cornish hens with salt and pepper. Add lemon and rosemary into each cavity. Place it in the roasting pan and add garlic around them.
  • Roast it in the preheated oven for 25 minutes. Meanwhile, whisk wine, chicken broth, and remaining olive oil in a bowl.
  • Remove hens from the oven and reduce the temperature to 350-degree F. pour wine mixture over the hens and continue roasting until hens are golden brown and juices run clear, about 25 minutes. Insert thermometer that reads 160-degree F.
  • Moreover, transfer the hens to the platter. Wrap hens with aluminum foil to keep it warm.
  • Transfer pan juices and garlic to a saucepan and let it boil for 6 minutes.
  • Lastly, cut hens in half and arrange these two halves in each plate. Add sauce and roasted garlic on the top. Garnish with remaining rosemary and serve.
