  • 2 cups heavy cream divided
  • 6 oz semisweet chocolate chopped
  • ¼ cup unsweetened cocoa powder
  • 1 ½ cups whole milk
  • ¾ cup granulated sugar
  • 3 large egg yolks beaten
  • 1/8 tbsp sea salt
  • ½ tbsp pure vanilla extract

Instructions
 

  • Firstly, whisk together cream and cocoa powder and bring it to a boil. By whisking constantly, boil it for 30 minutes on reduced heat.
  • After that, remove from heat and add chopped chocolates. Whisk remaining cream and make it smooth.
  • Next, transfer it to a bowl and position a mesh strainer over it. Place it aside.
  • In another bowl, whisk egg yolks.
  • In a saucepan, whisk milk, sugar and salt on medium flame. As the milk mixture is warm, add milk to the egg yolks and whisk to mix together. On medium heat continue to mix the custard.  Stir it with a spatula and until it thickens.
  • Moreover, add vanilla and stir.
  • Let it cool in the refrigerator for6 hours.
  • Lastly, transfer it to an airtight container and freeze for 6 hours.
