Chicken stir is my and my family’s favorite dish which is extra delicious. Addition of vegetables  will make it healthy and more good.

Ingredients
  

  • 1 tablespoon minced fresh ginger
  • 1 tablespoon minced garlic
  • 4 cups water
  • 2 cups white rice
  • cup soy sauce
  • ¼ cup brown sugar
  • 1 tablespoon cornstarch
  • 2 tablespoons sesame oil, divided
  • ¼ teaspoon red pepper flakes
  • 3 boneless chicken breasts, thinly sliced
  • 1 head broccoli, broken into florets
  • 1 onion, cut into large chunks
  • 1 cup sliced carrots
  • 1 green bell pepper, cut into matchsticks
  • 1 can sliced water chestnuts, drained

Instructions
 

  • Firstly, boil water and rice over a high flame. Reduce the heat and simmer until the rice is tender and water is absorbed, for 20-25 minutes.
  • Meanwhile, add cornstarch, soy sauce, and brown sugar in a bowl and stir until it gets smooth. After that stir in ginger, garlic, red pepper flakes; add chicken for coating. Cover it and marinate in the refrigerator for 15 minutes.
  • In a frying pan add sesame oil and heat on high flame. Add vegetables such as broccoli, onion, carrots, water chestnuts, and bell pepper. Cook and stir for 5 minutes. Transfer these cooked vegetables in a dish and place it aside.
  • Lastly, in the frying pan add marinade chicken and cook until it is browned, for 2 minutes. Stir in vegetables. Let it boil; cook chicken until it is no longer pink from inside and veggies are tender, for 5-7 minutes. Serve it with rice and enjoy.
